Panino Giusto is a chain of restaurants founded in Milan in 1979. It is known for the high quality of its fresh produce and geographic proximity, and their traditional processes.
The project located in the centrally located Cavour Square, continues to be based on the Italian architecture and design, with a special emphasis on the Milanese design of the eighties.
The shop was divided into four zones: the central bay, for the entrance of the restaurant and preparation area, the side bays with two large dining rooms, and the rear bay intended for a cozy dining room, work area, toilet, and staircases that allow access to a mezzanine level above, or descend to the basement level, where are the restrooms and the BOH program is found.
From the entrance the visitor perceives a certain monastic resemblance, where the vaulted ceilings and white walls stand out, and lay over on a surrounding wainscot, and continuous porcelain stoneware tiles provide a spatial continuity.
The result is a place with high ceilings, wide views, and natural light, besides achieving a significant improvement in the recovery of the original architectural elements of the restaurant.
